Coffee Menu

Coffee

Our drip coffee comes from Cafe Mam, roasted in Eugene, shipped overnight then ground and brewed daily. Each day of the week we feature a different roast. Our espresso drinks are made with the Dark Mountain Roast from Goodbean Coffee Company. Goodbean was founded over 2 decades ago and is southern Oregon's original premier coffee roaster, voted Oregon's best coffee two years running.  All of our espresso drinks include 2 shots, and come in 12 or 16 ounce sizes. If traditional milk is not to your taste you can choose from Almond, Soy, Hemp or Coconut milk.

Most coffee drinkers are not aware that Europeans buy a higher grade of coffee than Americans do. European grade coffee beans cost more and have half the defects (2% vs. 4%) of American grade beans. A defective bean is off-color, sour, broken or the wrong size. Bad beans burn faster than the rest of the batch, producing a bitter taste. Coffee connoisseurs agree that European grade coffee has a richer, smoother taste, with no bitter bite. There are two main varieties of coffee trees, Arabica and Robusta. Arabica beans are more flavorful and contain less caffeine than Robusta. The best-flavored Arabica beans come from the highest altitudes (3,000 feet up to the frost zone). Royal Blue Organics imports only European grade, certified organic, high altitude (“altura”), Arabica beans grown by indigenous farmers, producing the best cup of coffee around.

The Owners - Mona Treadway & Glenn White

Mona Treadway and Glenn White are the founders of the young adult therapeutic program, Dragonfly Transitions, located in Klamath Falls. Dragonfly Transitions is a home away from home for young adults who are struggling with the transition to healthy, productive independence. The dedicated team at Dragonfly Transitions supports students in their quest for independent living skills, personal growth and emotional maturation. In February 2010, Mona and Glenn took ownership of A Leap of Taste to further the mission of Dragonfly Transitions. They made the decision to invest in A Leap of Taste to provide a friendly environment for young adults in Dragonfly Transitions to acquire job skills, learn social responsibility and build relationships within the Klamath Falls community. Since, A Leap of Taste has employed a mix of local Klamath Falls residents as well as students of Dragonfly Transitions.

The Chefs - Liz Arraj, Susan Bailey, and Denise Opocensky

Susan was originally influenced in her love for gardening, landscape design, and cooking in the 1970s living in New Mexico. A move to Vermont, four children, many gardens, home building, landscape design, and cooking for 35 years continues to inspire her daily.

Susan is a vegetarian and lives by the philosophy of using locally grown foods, whole grains, and keeping flavors simple and light. She believes every garden holds its own special blend of delicious culinary delights!

Liz Arraj is a vegan chef who has trained under award winning Vegan Fusion Chef, Mark Reinfeld. She has earned the T. Colin Campbell Center for Nutrition Studies Certificate in Plant-Based Nutrition.

She teaches plant-based culinary classes at Klamath Community College called the Edible Excursion Series. She loves to inspire people to go back to their kitchens and have culinary adventures, cooking delicious, nutrient dense foods.

In her free time, she creates, and tests new recipes, and continues to expand her knowledge in the culinary arts. She also enjoys other artistic mediums, kayaking, and spending time with her inner circle of friends.

The Manager - Jay Treetop

Originally from the Black Hills of South Dakota, Jay moved to Klamath Falls in 2003 after accepting a job with the U.S. Forest Service. Upon arrival, he realized the need for an outlet for organic, and locally produced foods. In 2005 he opened and operated Nightfire Natural Foods where he and his team cultivated a popular community resource for whole living and self healing through nutrition, and alternative medicine. It was during this time, through the store, that Jay became involved with helping young adults gain valuable work experience, developing a positive work ethic, while encouraging healthy lifestyle choices. He holds a strong belief that personal change can be achieved through positive reinforcement, promoting self-sufficiency, and building upon each individuals strengths and abilities.

Jay is honored to join the Dragonfly team in the position as manager of A Leap of Taste! He will continue to build upon the excellent reputation that Leap has earned, while helping the Dragonfly team achieve their goals in improving the lives of young adults on their journey self discovery, and their transition into healthy productive individuals. Jay welcomes new challenges, loves learning new skills and enjoys connecting with people from all walks of life. He brings to the table his years of experience in food service, his team building skills and his ability to provide a positive work experience for anyone he has the pleasure to work with.

Jay enjoys spending quality time with his two children, Aunna and Joe, camping, hiking, swimming, wildcrafting and discovering the abundance of outdoor recreation opportunities that Southern Oregon has to offer. When not at work, or in the garden, he can often be found at one of his favorite hot springs or swimming holes.
